This Kumara (sweet potato) and spinach lentil curry is one of the easiest healthy weeknight dinners! It takes about 30-35 minutes to make, requires minimal prep time, and barely any attention while cooking. Sounds like a winner? Here is how to make it.


 

🍽 Serves 4 🕘 30-35 minutes Difficulty: Beginner

 

Ingredients:

  • 1 medium yellow onion

  • 2 garlic cloves

  • ½ Tbsp curry powder

  • 1 tsp turmeric

  • 2 Tbsp tomato paste

  • 1 ½ cups of red lentils, washed

  • 1 kumara (sweet potato)

  • 4 cups of vegetable stock

  • 2 cups of chopped spinach


  • Coconut cream and fresh coriander/cilantro to garnish.


 

Instructions:


  1. Prepare all the ingredients. Peel and chop the kumara (sweet potato) into small cubes. Mince the garlic and dice the onion. Chop spinach if needed.

  2. In a large pot, warm a little bit of oil over medium heat. Add onion, garlic, and spices. Mix and saute for aprox. 3-4 minutes until very fragrant and browning. Incorporate tomato paste and saute for 2 more minutes.

  3. Add lentils, kumara (sweet potato), and vegetable stock. Bring to a boil over medium high heat. Reduce the heat to medium and simmer for 20 minutes or until kumara is soft and the lentils are fully cooked.

  4. Reduce the heat to medium-low and add spinach and simmer for an additional few minutes until wilted.

  5. Serve with rice, topped with coconut cream, and fresh coriander/cilantro.

  6. Enjoy!
